WILTED LETTUCE SALAD

Adapted from food.com

1 head of Leaf Lettuce, washed
4 slices of nitrate-free bacon (or 3 Tbls. olive oil)
1/4 cup cider vinegar
1 tsp. salt
1/4 tsp. black pepper
1 Tbls. sugar
1/2 small red onion, sliced
1 hard-boiled egg, (optional)

Wash lettuce in a deep basin, scoop out leaves and spin dry. Then, towel-dry leaves before tearing them into a large salad bowl. Fry bacon until crisp, remove bacon from the skillet leaving drippings in the pan. Top torn lettuce with crumbled bacon, sliced onions and chopped egg (if using). Stir vinegar, salt, pepper and sugar into the bacon drippings (or olive oil) and bring to a boil. Pour hot dressing over the lettuce and toss, serve at once.
