MEI QING CHOI SALAD

Adapted from Carol Peterson’s Abundant Harvest Network.

1/2 cup vegetable oil
1/2 cup rice vinegar leaves from
1/3 cup sugar
1/4 cup soy sauce
2 heads Mei Qing, cleaned and sliced
1 bunch of Asian Turnips
2 Tbls. sesame seeds
1 pkg. Ramen noodles (sans seasoning pkg.)

In a glass jar with a lid, mix together oil, vinegar, sugar and soy sauce. Close the lid, and shake until well mixed. Wash well and pinch off coarse stems from turnip leaves. Combine mei qing choi, turnip greens, sesame seeds, and crushed noodles in a salad bowl. Toss with dressing and serve.
