GUY FIERI’S BABY BOK CHOY

2 Tbls. peanut oil
1 small onion, thinly sliced
1 Spanish Pepper, julienned
3 Mei Qing Choi, sliced into 1/2-inch pieces
2 cups cremini mushrooms, wiped clean, halved and sliced
3 cloves garlic, thinly sliced
1 Tbls. soy sauce
2 tsp. fish sauce
freshly cracked black pepper

In a wok or large sauté pan, heat the oil to almost smoking, add onions and peppers. Sauté, stirring constantly, for 2 minutes. Add mushrooms and cook for 2 minutes more. Add mei qing, garlic, soy sauce, and fish sauce and sauté until just wilted. Add black pepper, to taste, and serve immediately.
